Clayton’s journey began in the bustling kitchens of acclaimed restaurants, where he developed a passion for flavor, presentation, and uncompromising quality. But day after day, he ran into the same problem: sourcing truly fresh, nutrient-dense produce that could match the standards of fine dining. Most options were shipped from hundreds of miles away, losing vibrancy, nutrition, and taste before they ever hit the plate.
Determined to change that, Clayton traded the limitations of traditional sourcing for the possibilities of urban farming. Miniature Harvest was born in Dallas, Texas, with a simple yet ambitious goal: to grow the most flavorful, nutrient-rich produce possible, right where it’s needed, and deliver it at peak freshness.
We’re starting with microgreens — nature’s most concentrated source of flavor, color, and nutrition — grown in small, carefully managed batches to ensure unmatched quality. But this is just the beginning. Our vision is to expand into a full range of locally grown produce that elevates every plate and supports a healthier, more sustainable food system.
